Grain-Free Flaxseed Bread

This delicious Grain-Free Flaxseed Bread is perfect for those wanting a grain-free, gluten-free, dairy-free bread alternative.

It’s super healthy and contains nutrient-dense ingredients that are all good for you! It’s particularly good for menopausal women as it is made with flaxseeds, containing phytoestrogens. Read more about phytoestrogens and menopause.

I recommend grinding your own flax seeds where you can as pre-ground flaxseeds can quickly become rancid. Store any leftovers in the freezer for your next recipe.

You can swap out the coconut oil for another oil like walnut, macadamia or light olive oil. Don’t use toxic seed oils!

It’s delicious toasted and goes well served with my Breakfast Frittata for a healthy meal at any time of the day.

This recipe makes ten servings and it will take you about one hour to make. Refrigerate the bread in an air-tight container for up to five days or freeze for up to two months. I recommend freezing it already sliced, so it’s easy to pull a slice out of the freezer and toast as you need it.

Grain-Free Flaxseed Bread

Ingredients:
1 1/2 cups (210g) Ground Flax Seed 

3 1/4 teaspoons Baking Powder 

1 teaspoon Sea Salt 

5 Eggs (medium size room temp)

210ml Water (room temp) 

1/3 cup Coconut Oil (melted and cooled)

Method:

Preheat oven to 180 degrees celsius. Grease the inside of a loaf pan or line it with parchment paper.
In a medium size bowl, mix together flax, baking powder, and salt. Use a whisk to stir until well combined.

In another bowl, beat eggs with a whisk for 30 to 60 seconds. Add water and coconut oil, mixing until combined.

Add wet ingredients to dry and stir until combined. Let the batter sit for 1 to 2 minutes to thicken slightly.
Pour batter into loaf pan and smooth out the top with a spoon. Bake for about 50 minutes, or until the top feels set and the loaf is browned.
