Grain Free Porridge

Porridge is a wonderful, warming breakfast for the cooler months, but many people find they cannot tolerate oats, particularly if they are gluten intolerant. It is possible to still have porridge though! Try my Grain Free Coconut Almond Porridge – it’s a lovely substitute using almond flour and coconut instead of oats.

This porridge is nutrient dense, dairy free, gluten free, grain free and suitable for vegan and vegetarian diets.

Make sure you choose a good quality almond milk or make it yourself. Try to avoid added sugar, vegetable or seed oils, carageenan and any artificial additives.

This recipe serves one and will take you about 10 minutes to make. Feel free to use whatever milk you like and add some yummy toppings. Stewed apple is particularly good and is very beneficial for your gut health.

You can make a big batch of this porridge and just reheat daily as you need to use it.

Grain Free Coconut Almond Porridge

Ingredients:

3/4 cup Unsweetened Almond Milk 

1 1/2 tablespoons Almond Flour 

1 tablespoon Unsweetened Shredded Coconut 

1 1/2 teaspoons Ground Flax Seed 

1 teaspoon Cinnamon

Method:

Add all of the ingredients to a saucepan over medium heat. Whisk continuously until your desired thickness is reached, about 3 to 5 minutes. Divide into bowls and enjoy!

Notes:

Use an alternative milk of your choice. 

Add raisins, dates, maple syrup, honey or your sweetener of choice. 

Refrigerate in an airtight container up to 3 to 5 days. 

One serving is equal to approximately 1 1/4 cup of porridge.
