Healthy Chicken and Herb Salad
Summer is the perfect weather for refreshing cool salads. This Healthy Chicken and Herb Salad is packed with protein and has a creamy, herby dressing that tastes amazing!
Meal prep can be an arduous task at times, but one great tip is to cook a chook (or two) at the start of the week for easy healthy lunches. It helps you avoid grabbing takeaways at lunch time and saves you money too.
This recipe will serve two to three, depending on how hungry you are. It will keep in an airtight container in the fridge for a couple of days.
The vegetables and herbs take this salad to the next level with flavour and they also contribute a range of nutrients.
Please make sure you find a good quality mayonnaise for the best health benefits. Gevity Rx or Undivided Food Co are great or make your own with a good oil like olive, macadamia or avocado. Many commercial mayonnaises have added sugar, artificial additives and contain toxic oils.
Healthy Chicken and Herb Salad
Ingredients:
2 cups cooked chicken (chopped)
1/4 cup mayonnaise – good quality low sugar or homemade
1 stalk celery (finely chopped)
1 small Lebanese cucumber (finely chopped)
1 medium gherkin (finely chopped)
1 green onion (diced, or chives or finely diced red onion)
1 Tsp Dijon mustard (optional)
1 Tbs lemon juice
2 Tbs chopped mint
2 Tbs chopped parsley
Salt and pepper (to taste)
Method:
Mix mayonnaise with lemon juice and Dijon mustard.
Combine remaining ingredients with mayonnaise mix.
Mix well.
Variations and Tips:
Serve on a bed of lettuce or in a bread roll or wrap. You could also use large lettuce leaves as wraps or hollow out cucumbers cut lengthwise and spoon the mixture in.
